Welcome to TC's Blog

Sorry it's been so long...

I've been a bit busy, and a bit lazy, but it's blogging time B*****s!  We have (of course) Kelly going to the Olympics, and currently first place at the XGames.  In fact, the entire women's team placed 1-4 in qualifiers, and young Ms. Hollingsworth took fifth.  Look out for her  in 2014!  Everyone here is expecting a podium sweep for the US, but nothing in the future is ever certain.  I can say that our US athletes appreciate your support...

In other news, the new stove at TC's is almost too nice, so we can cook your food a lot faster.  The weather will be great for snowmaking all week.  February will be a busy month, with the Dew Tour, Olympics, and President's week*.  We'll be running Filet Mignon, fresh Cod, and rack of lamb for most of the month on the specials board.  Also (I bet you didn't know this!) avacados are cheap this time of year, so we'll be doing some dishes with my favorite fruit.

I've instructed our whole kitchen staff to "jump" on February 4th, and spot the landing around March 1st.  Rookie of the Year award goes to Cipriano, our dishwasher, who does the work of two men, and never complains.

Tim and Becky are doing well, and will be running a restaurant on Block Island this summer. Josh has a new baby, Gabriel.  Brian bought a house.  Fast Jack got hit by a plow truck, but is recovering... Moose is filling in for him.  The dogs are fine, finally getting along with the cat, and they love all the cold and snow.

Again, I'm sorry I didn't update for 167 days, but I promise to try harder.  You can also follow me on Twitter @chefbobcat.

See you soon, and GO KELLY!

Smoky's Return

Happy Easter

Hi everyone!  Sorry I haven't updated lately, but I've been busy..  I'm on a quick 3-day vacation, visiting my friends and their family.  I secretly brought some Easter eggs to hide for Nate (4) and Braelyn (7).  The devastation from the ice storm this winter is amazing here in Peterborough, NH.  Every tree is broken, and I'd estimate at least 25% were killed.  There is deadfall everywhere.  I'll be updating more often, so stay tuned..

Kelly Wins!! Again and Again....

Hello Everyone,
I have been lax on updating you all on Kelly's competitions this season.
She got a 1st at the first competition of the season, a Grand Prix at Copper Mt., CO.  Then a 2nd at the first leg of the Dew Tour at Breckenridge CO.  Next was a big win here at Mt Snow for the second stop on the Dew Tour!  Then she jetted off to Switzerland for a win at the Burton Global Open.  Now she is in Aspen for the Xgames so watch for her tonight live on ESPN at 930.  She is having an amazing season, we don't have enough room in the trophy cases for all her awards!  Also, come check out her two Dew Tour trophies on display at the restaurant.

Reopening for the Season

Hello Everyone,
As a lot of you know we have been closed for over a month.  We have been on vacation surfing in Costa Rica and we missed you all while we were gone!  We are opening for the season on Thursday, November 20th at 4pm.  We will have half price pizza and a fully stocked bar!  We have made a few changes while we have been closed including a new front door.  Also, for the ladies, you can now sit down in the bathroom and close the stall door!  Many of you knew that this was not possible before.  As we speak, Tim is busy painting and cleaning the kitchen, Al is cleaning the bar and Terry is cleaning the fishtanks.  Hope to see you all this week!
Tamarindo Beach....Wish you all were here with us!!

What I Like To Do When I'm Not Cooking Your Dinner

     September 22nd, Wasque Island.
What Bob did on his vacation in September...No we didn't serve it at TC's.  I think it was a catch and release, right Bob?
Nope. She was delicious... in three different recipes.
